Sticky, sweet, caramalised and crunchy – cinder toffee is well known for its bonfire night appeal. Depending on which part of the world you’re from, cinder toffee is also known as yellowman, sponge toffee or puff candy. Relatively easy to make at home, hot toffee is blended with a little bicarbonate of soda to make it bubble and foam – leaving the taste of rich honey, buttery notes and a hint of caramelised dark brown sugar. Our Applications team have been experimenting this month with a Burnt Cinder Toffee flavouring to enhance the sweet, sugary notes in spiced rum. Pair with cinnamon, banana and chocolate for the perfect sweet combination.
